Need menu ideas for light pre-Christmas dinner

In-laws are staying with us over the whole Christmas period, I am trying to get the whole thing planned waaay in advance and need ideas for a light i.e. not too stodgy dinner on 23rd Dec. Was thinking possibly something chinese/other oriental?? Small complication is that FIL is diabetic so nothing sugary. Anyone have any favourite never-fail recipes they care to share?

What about salmon fillets?

I do a salmon and butterbean mash.

Salmon fillets with a mixture of

olive oil
orange juice
grated orange rind
2 teasps Wholegrain mustard
breadcrumbs

Butterbean mash

can of butterbeans
creme fraiche
watercress
knob of butter
clove or 2 of garlic crushed

Put breadcrumb mix onto salmon fillets and grill 10-12 mins until cooked.

Melt butter in saucepan,add garlic.
Cook 2 mins

Add can of butterbeans and mash ,add creme fraiche to heat through.

Add watercress to beans until wilted.

Serve salmon on top of mash.
