banana muffins look insipid!

any ideas for a topping/ icing that I can use?

lemon icing? or my preference is I smoother them in maple/golden syrup and let it absorb for a coupl eof hours.. lush.

personally they are the only muffin I can't make and always look minging (when I do them) I think the shop made banana muffins must have a lot of rubbish in them! Peopel die for my muffins normally but the banana once I've never dared give a public outing.

yeah gwon please!, mine are always stodgey and basically crap... it's a shame because muffins are my speciality for work/school fates etc(I'm simple)

hello twiglett. did you slip in unnoticed?

Try sprinkling demerera or dark brown sugar over them and brown under grill??

10oz S/R flour
1tsp bicarb
1/2 tsp salt
4 oz granulated sugar
3 oz plain chocolate chips (optional but great)

put in bowl and mix

3 large well-ripened bananas mashed (240 - 290 ml if it matters)
1 egg
3 fl oz milk
3 flo oz veg oil

mix together

mix wet into dry

muffin tins .. bake at 180 (fan oven) for 20 mins until top lightly browned

small (fairy cake sized) take 15 mins

what about my insipid muffins?! Was hoping for a dreamy swirly topping recipe...

BTW i used the recipe from files (first banana cake) and the loaf looks fab, nicely brown, but the muffins are pale and uninteresting. They're for the school fete, so may have to give the loaf and eat the muffins myself

if you like cinnamon + nuts could do cinnamon and pecan nut topping (mix icing sugar and cinnamon with a bit of water, then add pecan nuts as topping)

Or if you wanted something really quite sweet could do toffee icing: 2 tablespoons butter, 2 tablespoons brown sugar, 2 tablespoons milk, 1 cup icing sugar.
