Calzone recipes please...

I want to make calzone tonight, mainly because we are trying to eat more vegetarian meals and this seemed a good choice (and a good alternative to pizza).

If you make them, what do you fill them with? Veg recipes preferred although if you have a good meat one I could save it for another day!

I also need to make one dairy free as I have a dd allergic to dairy.

I did the one from Jamie at Home.
You fill it with tomato sauce, mozzarella, spinach and mushrooms.
It was ok - hopefully someone will have a better one.

In the end I made some smaller ones for the dc with tomato sauce and ham and mozzarella (just tomato & ham for the allergic dd) and they went down well.

I made Jamies recipe for me and h (like Kathy said) with tomato, mushrooms, spinach and mozzarella. They were lovely.

Shall make them again.

I'd make them with a more ooomphy cheese than mozzarella tbh....(and I'm in Italy so what I'm saying is almost blasphemy) Something tasty, but which still runs and gloops- like cheshire or wensleydale...with mushrooms and ham.....
and more filling than you'd put on a pizza, or they're a bit bready. x

Sounds good - You are right, mozzarella is nice but a bit lacking in the flavour dept. Shall give that a go next time.

Yeah I didn't put enough filling in mine - not Jamie's fault. They ended up a bit stodgy. They keep better than pizza though. I think I'll make one in future if I'm in danger of making more pizza than I can eat in one go.
