hummingbird cupcakes - easy AND divine!!!

made these tonight and they're LOVELY and sooooooooo easy!!

200g s/r flour
225g caster sugar
85ml vegetable oil
60g chopped pecans
1 large ripe banana - mashed
4oz pineapple
1/2 tsp vanilla essence
2 large eggs - lightly beaten

oven to 170 degrees

ingredients into a bowl and mix

put mix into cases into oven for 20mins

job done lovely

I didn't have any crushed to just chopped up some pineapple rings

it was very nice to get a juicy lump of pineapple in the cakes though!

sounds lovely - are they really dense or do they rise ok? how many cupcakes does it make?

I got 15 from this by half filling white muffin cases - I wanted to be able to put cream cheese frosting on them rather than have them spilling out over the top iyswim?

they aren't dense in the slightest which has surprised me - lovely and light and the pineapple makes it lovely and juicy

I used pineapple rings chopped up - the recipe didn't state if it was meant to be crushed but the chopping up worked too
