vegetarian dinner party

I am having dinner party for some friends, one of whom is a veggie, and another who is intolerant to cheese. Does anyone have any delicious recipes they could suggest? I thought maybe something that cheese could be added to at the last minute, or use two separate dishes (i.e. one with cheese, one without). Tks!

Was a thread earlier on the perfect roast vegetables?! Risotto using veg stock and veggies (Courgette/Peppers/Onions etc) ? sprinkle or Parmesan on at the end for the non meat eaters ?

Thanks, could do that. Any tips for a nice risotto - mine always turns out on the bland side. Also, any interesting side dishes?

roast stuffed peppers wiht couscous? You can put cheese on top last minute...
Or you could stuff them with Quorn mince!Really spice them up
Or how about Tortilla, stuffed with Quorn mince/Mushrooms, peppers and tomatoes and some lettuce, etc...
Althouhg not sure, not really posh dis, I suppose...i.e. Dinner party dish...hmm...

Thanks for those ideas. Quorn a no-no, as apparently has been genetically modified, but all other ideas most welcomed, thanks!

Risotto. Only recently been using the actual risotto rice, used to use 'much cheapness long grain with quorn ermm chicken style pieces'. Trick is imho, a good salty butter and good olive oil to fry everything off in inc rice and then just use a good quality homemade stock or stock cube. Sweet vegetables fried to bring out the sweetness or a punch like celeriac to really contrast against??? might be good [Note to self, try celeriac grated in risotto]

Side dishes i would go for is raita and onion relish and guacamoli [check spelling]

My veggie m8 from yrs ago always complained of bland then we cooked butternut squash bubble and squeak.. side dish of english mustard... Greeeattt

oh...mustard....
You know, we love mushrooms as a sidedish and I fry the mushrooms with onions and garlic (if you like) than add dashes of Worcestersauce,some Dijon mustard and some Balsamic Vinegar and a bit of sugar/sweetner....
full of flavour!
