Yummy tortilla wraps need to be eaten - would appreciate some ideas please for veggie fillings - not too heavy on rice ..

quorn pieces cooked with a fajita style sauce, sour cream, baby spinach
pan fried/roasted veggies (courgette, leeks, toms, peppers) with soured cream and a little grated cheese

cold for lunch I like hoummous with a little chopped fresh chilli, baby leaf spinach, pine nuts and raisins scattered, a little freshly grated carrot and cheese. Slice a sweet red pepper for crunch and enjoy

Refried beans and grated cheese. Warm in the oven until melty. You could also add tomatoes/salsa/jalapenos/whatever you've got lurking in the fridge.

hoummous, felafel, olives and salad would be my favourite, but I also do veggie fajitas quite frequently.

fry onion, peppers, baby corn
add fajita spice mix
add tin red kidney beans

serve with guacamole, sour cream/yoghurt, salsa etc

My DH actually prefers these to chicken fajitas

I really like rich tomato sauce, ripe chopped avocado, creme fraiche and grated mature cheddar - not wildy health though!!
