Last time I tried to put sliced sweet potato in the oven it just went soggy. Am I doing something wrong?

I can never seem to get sweet potato very crispy, but they are better if you don't par-boil them at all first like you would with ordinary potato.

no thay have too high a water content to go crispy like normal spuds... that is why the go to mush if you boil em too long...

Cut them into chunky wedges an sprinkle with a little olive oil and rosemary, toss in pan to spread evenly and roast for approx 30mins, delish. Same with normal spuds too, we often mix them.
