My friend makes the best ones apparently, with turkey mince and cooks them in the oven. I cant ask her for the recipe because the nite she said she would send it she went into labour shortly after and I imagine its the last thing on her mind now

So now my turkey mince is here and I need some nice, easy meatball recipes, TIA

There's a step by step video link of a recipe from Jamie Oliver here haven't tried it myself but it looks quite foolproof.

Will be watching this thread tho as I'd like a recipe that means cooking the meatballs in the oven - I always seem to burn them in the pan!

There's a fantastic meatball recipe in Nigel Slater's Kitchen Diaries, but it uses pork mince not turkey, and they're fried not baked...could post if you like? I've done it before with lamb mince and it worked OK so might be OK with turkey (though pork mince makes them all sticky and delicious. Mmmmmmm).

me too haribo, I cant cook them in a pan, always end up burnt on outside and red as a lobster in the middle and they taste like crap

I mix my mince (any meat variety) with some dried herbs (mostly oregano & basil, but whatever's in the cupboard really) shape into ball and then brown lightly in a deep-ish frying pan. Pour over a jar of passata and simmer until meatballs are cooked.
I've also done this in the oven.

You can use any standard meatball recipe and just cook them in the oven for 20 mins or so on moderate - it works fine and stops them breaking up. Alternatively you can use Prufrock's method (traditional German I believe) and boil them in stock. Try a search for the thread. This works well too and is now my favourite method! Neither method ends up with them particularly brown but they are better shaped!

Most meatball recipes are very similar - mince, breadcrumbs soaked in a bit of milk, onion (which can be prefried), egg to bind, plus flavourings (garlic, salt, pepper, worcester sauce, herbs, alcohol, spices, mustard powder, etc etc) Just pick a standard one (nigella, delia, whatever) and don't be afraid to modify to your own taste!

macdog how long do you put them in the oven for and on what temp?

Im gonna do a Simon Rimmer one i found because its simple, with onions and garlic, will add some chopped chilli and some herbs and thats about it
Every time I cook meatballs they end up rubbish so hopefully this will be better

Usually around 200c for about an hour in a covered Pyrex dish.

If you make quite small meatballs they cook through better than big ones.

Trial and error needs to happen till you find something that works for you

My fella makes the best meatball meal!
Makes meatballs wiv beef mince,chopped onions and red and green chillies.
Cook them in the oven.
Add them to saucepan of bologniase sauce with dash of Regaee regaee sauce in,
Cook for bit then serve with pasta

Delias Pork Meatballs are lovely - I am sure it would work with turkey - she adds chopped up bacon, sage, breadcrumbs, parsley and parmesan.

Can post the recipe if you want.
