Hi,

Have just had the most wonderful butternut squash and carrot soup for lunch. Feeling smug as it's the first time I have made soup so nice!!

What's your favorite recipe that I could try?

Parsnip and apple is yummy! I am also a fan of Tana Ramsey's beetroot soup.

Pear and Gorgonzola, it sounds bonkers, but it is so nice. It needs to be heavily salted, try with warm bread.

maggs, was that the recipe from the juicing thread? I made it the other day, it was lovely.

I made one today with sweet potato, chilli, spring onion and coconut milk. Delicious.

Walleroo, please could you give me an idea of how to make the beetroot soup? I had a LOT of beetroot in the box this week and am struggling to do anything with them rather than just roast them with cumin.

Could I have the recipe for the french onion as that is my dads favourite...emm!!!

The pear and gorgonzola sounds interesting. Any recipe???????

2 chopped shallots

1 chopped leek

2tbs chopped sage

4 William pears, peeled and cut into chunks

a chunk of gorgonzola cheese

1 cup vegetable stock

salt and pepper

milk or cream to taste

Saute the leek and shallot in butter

Add the pears and saute for a few minutes

Add the stock, bring to the boil and simmer for about 20 to 30 minutes or until the pears are tender.

Add the herbs and cheese and process until smooth

Season, add milk and cream to taste.

Serve with a thin slice of pear, some crumbled cheese and some milled pepper
