What to do with leftover pork joint?

Is there another meal I can make from a decent amount of cooked pork (shoulder).

Stir fried rice with pork.

I'd probably do another roast dinner with it(in fact, that's what I'm doing tonight!). Put hot gravy over the cold meat and have roast spuds and veggies. Quite a treat on a weekday night!

I think another roast dinner is a good idea.

I had used Jamies recipe (Pork & chilli pepper goulash, slow cooked for 3.5 hrs) but have loads of meat and sauce left, so maybe I should just reheat with a pile of veg again!

I like the stir fried rice option - might still try that!
