My DS love YPs so we have thim in some form (T in the H or YP) weekly.

They are always so disappointiing taste great but look, well, deflated.

I have done Good Housekeeping and Delia's recipe and just accepted, after changing fat, double sieving flour etc that may I my oven was not up to it.

At the weekend I used a Nigella recipe, it was a revalation. Oh. My. Goodness. They were huge!!

300ml of milk
4 eggs
250g plain flour

Mix eggs and milk (+ seasoning) with an electric or balloon whisk. Leave for 15 mins then whisk in flour. Put pan (30cmx19cmx7cm) into hot oven with tablespoon of dripping or fat (I used flora white as am veggie) until smoking pour in batter mix and place in oven for about 20 mins.

She doesn't actually state temp, but I went for 250 and turned it down to 225 when I put them in - have the worlds most useless oven which only does 25 degree sections.

I always read your name as mumtoJamieOliver, surely you wouldn'ty need a recipe?
