What do I do with fresh coconut?

Nobody wants to eat it as it is (think it's past its best), but can I grate it then freeze it? Or is there a nice quick recipe I can use it in? Can only think of making a fresh chutney with it but that's a hell of a lot of chutney!

Darn. It uses cream of coconut!

You should be able to grate it (or wizz it in the food processor for alot less effort)and freeze it.

actually we cut out the nutty part, chop it up into chunks and munch away. tis yummmy.
