how do I make a quick salad dressing?

It's only for me for tonight, so nothing fancy. Have olive oil at the ready - but what else??

balsamic vinegar? I don't even mix them - just toss them on the salad seperately.

2 spoons (table or desert spoons)olive oil to 1 spoon of vinegar (red or white wine, cider or sherry vinegar all fine). 1/4 clove of garlic chopped very fine (leave out if you don't fancy it). Small teaspoon of french or wholegrain mustard. Salt & Pepper to taste - whisk or shake together in a Jar.
You can add a bit of honey or lemon juice to the above too if you fancy it.

for a real quicky, just drizzle on some olive oil, the some vinegar, then add a squirt of lemon. yum

Or if you are feeling more energetic, mix in a jar (with a screw top) 2 tablespoons each of oil and vinegar (give or take according to taste), squeeze in a lemon, add 1/2 teaspoon of sugar and the same of mustard and some fresh or dried herbs. Give it a good shake and it will thicken up nicely.

I do olive oil, balsmamic vinegar, mustard, salt and pepper, wizzed up with a fork.
