help - why does my chicken soup taste like water??????

OK have been simmering my left over chicken since 2pm and just tasted it and its gross, really watery. Had even put the juice in as had saved them. does it just need to keep reducing????

I've never made this before, can you tell

Presumably you've also got the carcass simmering in there ? Just simmering meat will not give you the flavour.

When I make stock from left pver chicken mine is simmering (lid on) for a day or so.

Glug of wine.. leave enuff for me!!! Celery and sweet potatos/swede/leeks (leftovers you would put in the bin) chuck it in... but let it cool and skim the fat off.

too much liquid? reducing doesn't really help flavour, imo. Better to start with less liquid and add more if you need it. Sorry, that's not much help now, is it?
