basic risotto with just butter + parmesan is good

onion, carrot + peas/broad beans. - fry off the onions +carrots and cook with rice and add frozen veg when rice is just off being cooked

Ok so far I fancy spinach and courgettes, could I add some mozzarella to give it a bit of protein? Or just stick with parmesan?

we do an ace one with peas, lemon and smoked salmon fillet based on a Jamie recipe

remember the glass of vermouth at the beginning - makes a big diff

My favourite is with asparagus and/or spinach with parmesan. Our son loves it with mushrooms (and without the parmesan!).

Spinach, peas and fresh mint - cook (or steam) together and blend before adding to the rice. Lovely fresh taste and a delightful bright green! Serve with lashings of armesan.

Lemon and rocket really scrummy.

Borlotti beans and rosemary.

Roasted peppers.

Have a sausage and radicchio, red wine risotto recipe, you could substitute with courgette or mushroom.

Am so pleased at these ideas - thanks Chipmunk! Was just thinking about going shopping and was irritated as we're trying to meal plan better, and have now realised we have all the ingredients for a lovely spinach and courgette risotto. I even have loads of leeks to toss in too!

Leeks. Best risotto ever. Mixes well with mushrooms, but is perfect on its own.

Butternut squash. Roast it first then mash up and add for last five mins of cooking.
