Surely the cream cheese bit will go off if it isn't stored in the fridge??

I usually store in fridge & take it out half an hr or more before eting to let sponge come to room temp.

In my stomach.

I did that with some cup cakes but it made them - well, solid.

I don't put mine in the fridge, and I haven't been ill yet! I thought that the icing sugar that you added meant that I didn't have to be in the fridge (or am i deluding myself?)

same as blamewithparents

have always just stuck it in the cake tin along with all otehr cakes / biscuits

unitl now have never even thought twice about it
and im alive (as are my charges)

ah now that's interesting - the cup cakes i made had a load of icing sugar in the icing but i made delia's ultimate carrot cake and it has mascarpone, fromage frais and only a spoon of caster sugar, so I'm not sure that will help in the same way?
