this is probably a ridiculous question but does it matter if i haven't cooked my chicken in foil?

No I never cook my chicken in foil just keep it moist by spooning it's own juices on to it whilst cooking.

No, it doesn't matter at all. I never use foil, never have, and love roast chicken.

The foil is to stop the outside burning / drying out before the inside is cooked. If it tastes good, you didn't need it!
