what exciting meal can I cook with....

pork mince (fresh)

carrots
onions
parsnips
leeks....all these veg have best before date of 6th Nov but they look ok so ok to use???....

baby potatoes

also have pasta, rice, stock etc

vegetable curry ; winter soup with rice added to the soup; Pork shepherds pie? - I'm veggie so not good with meat. Pork meat balls with rice.

these all sound lovely but please give me some recipes!

I'm usually all roast dinners, shepherds pie, spag bol etc.

Need some recipe ideas now I'm a WAHM and have a bit more time!

Also, to use up I have some olives, fresh spaghetti, have olive oil etc - can I do anything with that??

I would fry the pork mince and a chopped onion. Add all the veg chopped up and a cupful (I use that amount for 3) of rice (use normal if you don't have rissotto) a tin of tomatoes, 3/4 pint stock and some garlic. Bring to the boil and simmer for 30-49 mins until the rice is cooked.

Add grated cheese to serve.

Meatballs are really easy.

Combine the mince with breadcrumbs, an egg and a few herbs if you have them, roll into balls and pop inot the fridge ofr 15 mins.

Then cook an onion in some olive oil, add a tin of tomatoes and liquidise. Splash of milk and a tsp of sugar (to stop it being bitter), then drop the balls in and simmer for 20 mins.

Serve with your spaghetti!

You could dice up the carrot and cook with the onion before liquidising for extra veg.

Then you could make leek and potato soup with the baby potatoes and leek. You can freeze that if you don't want to eat it now.
