is it really hard to make? any recipes you'd recommend, been googling and there seems to be quite alot of variations and it seems hard to make.

have had fudge failures for as long as I can remember - it either boils over or is overcooked or doesn't set... until i discovered this recipe:

500g caster sugar
3 oz butter
3 tbsp cold water
2 tbsp golden syrup
1 can condensed milk
few drops vanilla extract.

Put the sugar, water, butter and syrup in a saucepan, heat through until the butter has melted and the sugar dissolved. Then add the condensed milk and bring to the boil, boil, stirring continually, for about 10 minutes or until the mixture is golden brown and a little dropped into cold water forms a soft ball. remove from the heat and add the anilla, then beat with a wooden spoon until it thickens. then pour into a greaced tray and leave to set. mark out squares just before it is totally cool...

can i use granulated sugar instead? otherwise will have to get some tomorrow
