Red onions sweeter and milder. I'd eat red ones raw in a salad but not a normal one.

Taste sweet raw, milder (don't make me cry as much when i chop them) and they look nice in salads etc.

red onions are nicer when roasted in the oven

Red onions are red and the normal ones are yellow/white

But it doesn't matter too much if a recipe says use red and you only have normal.

would red onions taste better in a bolognaise?

They taste nice. Don't know if better or worse.

IMO red onions taste much nicer and give most dishes a nicer taste...

and i always would choose a red onion over a white onion for bolognese
