I have some chicken thighs in the freezer - bought because they were cheaper. I don't really want the faff of taking their skin off, cutting etc etc so wondered if anyone had any recipies where i could cook them whole - would particularly welcome ones for the slow cooker!!!!

Fling them in with onions, garlic, tin of toms, splash of wine and a handful of olives. A touch of chilli, some oregano and a squeeze of lemon would be good too.

Moroccan style would work well. Onions, garlic, lemons, a little honey, olives, turmeric. Slow cook, then serve with cous cous. I put veg (tomatoes, courgette, peppers or whatever) in the cous cous if I'm feeling virtuous.

Put em in a baking tray, cover them with Hoi Sin Sauce and some orange juice and bake them. Utterly yum.

In the slow cooker with sauteed onions, mixed wild mushrooms, chunks of pumpkin, stock and ceam.

Very simple - mini Roasts! Put a small slice of (basic) Mozarella on each thigh, wrap up in (basic) smokey bacon. Roast for 40 mins. Serve with Roast Spuds & veg.

A family favourite here

wow - milliways, that sounds delicious.

mazzystartled · 04/11/2008 17:12

i do a jamie oliver thing

put the chicken in an ovenprovf dish
cheery toms on top, garlic, basil or parsley, chilli, olive oil, lemon juice if you like

bake in oven, the skin goes all crispy and sticky

mazzystartled · 04/11/2008 17:14

chop some rosmary and grate lemon peel
roll chicken in it
wrap in parma ham/bacon
put on a bed of chopped leeks mixed with a dash of cream
[or finely sliced butternut squash and cream]
and bake for 45 mins

tis divine

We do a Mexican thing with chicken thighs. Brown off in a pan, then add some chilli powder, 1/2 pint of chicken stock, tin of tomatoes and tin of chilli beans. Cover and simmer for half an hour. We usually serve it with rice and a dollop of soured cream on top.

chicken thighs are my current favourite thing as they are moister and tastier than breasts and a lot cheaper

lovely baked in oven at about 180 with a bit of thyme, olive oil, salt and pepper. roast some winter veggies at the same time and serve with some green veg. delish! bake some extra and then have that cold in sandwiches or salad.

or, even easier, colmans coq au vin packet sauce is surprisingly lush and doesn't seem too full of nasty additives. put thighs, chopped onion, chopped mushrooms and chopped carrots in a casserole dish, mix packet mix with water and then put whole lot in oven. serve with mash. i love cooking from scratch so this is pretty much the only packet thing i do, but it is really easy and really tasty.
