What vegetables do you put in your stew?

Parsnips make it nice and sweet. Depends what meat you use. I think sweet potato and pumpkin go nicely with chicken.

leek, onions, bung in some sweet potato - it all breaks down and thickens it up, some peas if you fancy it, pepper, mushrooms.

I love doing stew so throw in any veg I can lay my hands on

parsnip
butternut squash - (can go a bit mashy, but nice if you add it near the end of cooking)
lentils are good too to add bulk
i like yellow split peas too

Mine too - we have no meat, but a vege stewy soupy thing gently bubblin out there. Nowhere near enough veg in it though

I normally use braising steak or stewing beef.

Do you think pumpkin would still taste nice with it?

I cook it in the slow cooker do you all add leeks at the end or at the begining?

I put white beetroot in one by accident the other week, dh had visited his dad's allotment and dug up random things. I thought it was a turnip. It was surprisingly nice!

What is pearl barley?

Would you add courgettes at the end?
Would youadd the leeks at the end?
Would you add mushrooms at the end?

Various combinations of above.

I often shred in some savoy cabbage for a bit of texture and put in a can of either canellini or flagolet beans too.

Butternut squash is nice with pork casserole.

I use carrots, onions, and mushrooms if I have them, ditto leeks, but tbh it's usually just carrot and onion.

tbh, not much of a taste, slighty nutty, but it bulks the stews out.

Always Onions, carrots and peas.

Then what other veg which is dying in the fridge.

If i have butter beans i will add. And use either rice (brown or white) or pearl barley to thicken and add texture.
