Fishcakes for teas tonight, anyone got a good recipe for champ?

I really fancy it.. lovely lovely comfort food but have never made it (not sure why), off to search now but often find someone on here has a killer hand-me-down recipe for almost everything!

I make it with double cream, infuse spring onions with some double cream then mash into potatoes with butter and salt and pepper.

had it last night warm up the milk with the chopped scallion plenty of butter ..

Thanks. I have no double cream.. good to hear milk will do..
