Excess Vegetables

Our fruit and veg order was accidently doubled this week so I have vegetables coming out my ears. I do not have room in the fridge so what can I do with excess:
Carrots
Kale
Celery
Leek

I am just overwhelmed with veggies. I could open my own street stall I guess...

yep- a farmhouse vegetable soup, bung it all in et voila. esp with a bit of bacon it will be lovely. maybe not the kale, not sure thats soup-friendly.

Carrots - cook lightly and freeze.
Kale - chop finely, cover in white/mustard sauce. Freeze.
Celery - Cook onion and/or leek. Make a thin white sauce, chop up celery and add. Add stock and boil. Liquidise into soup.

Leek - cook chopped leek, add cubed potato. Cover with boiling stock and cook until potatoes done. Liquidise into soup.

I know it's lots of soup but it's that time of year.

I am tempted to give them to the trick or treaters. The carrots are orange .
I will be cooking up a storm tomorrow.
It will be soup everyday this week.
