Garlic oil

Put together some garlic olive oil about a month ago? How long will it keep? When the oil runs out can I just top it up and if so how many times can I do that?

We do that with chilli's and I know we have topped up 2 or 3 times, so I would image it would be the same. Just keep going until the flavour starts to go.

Not sure if you're aware of this but someone posted the info a little while ago, apparently the FSA don't recommend making garlic/chilli/etc oil at home because of the risk of botulism.

Here was the thread, there was a link in it.

In any case I certainly wouldn't keep topping up the oil, would make a fresh batch and keep it in the fridge.
