4 - I usually do 6 oz flour and 3 eggs

That was my instinct (usually do 4oz/2 eggs) but suddenly thought it might be overkill with the large eggs.

with 8oz flour, I would do 8oz sugar, 8oz butter and 4 eggs

Hope you don't mind but can I just share, I have made the best cakes ever since I started weighing my eggs first and using the same amount in weight of butter, flour and sugar. Lovely, light and moist sponge. Yum!

Never thought to weigh eggs... Do you add the yolks and then match the weight with the whites? Or whisk them and add the same weight then?

Obviously you match the weight of the other ingredients to the eggs...

you weigh 3 eggs (in their shells) and then add the same weight of butter, flour and sugar. easy peasy.
