This is good and really easy

450g dried fruit (sultanas, raisins, currants) I used about 200g apricots and the rest raisins and currents
1/2 cup brown sugar
1/2 cup white sugar
1 cup hot tea, Ceylon or Earl Grey
1 egg
2 cups standard flour
2 teaspoons baking powder
1/2 teaspoon salt

Put the dried fruit in a bowl with the sugars, pour over the hot tea and stir. Leave to soak for at least 30 minutes, but preferably several hours.
Preheat oven to 160 degrees Celcius.
Lightly butter or baking spray a standard loaf tin and line the bottom with baking paper.
Whisk the egg and add to the fruit and tea mixture.
Sift the flour, baking powder and salt together and beat into the fruit mixture.
Scrape the mixture into the loaf tin and bake for about an hour until a skewer poked in the middle comes away clean. (In my oven this takes about an hour and a half)
Turn out onto a rack to cool.

Can I ask is 160 degrees about gas mark 4?
