Can I do anything with this butter?

I took some butter out of the fridge to soften and by mistake it completely melted. Now it has solidified again but has separated in 2 parts - white stuff at the bottom and yellow stuff on the top ... is it any good for anything or do I just bin it?

Yellow stuff is 'clarified' as the milk solids will have sunk to the bottom. this is very good for cooking as it burns on a higher heat. So ditch the white stuff and keep the yellow stuff.

oooh thanks, is that what they mean when they say clarified butter, it must be mustn't it... so just use for general frying/sauteing (?)?
