good ginger cake recipe anyone?

fancy making a ginger cake to go with lovely autumnal weather.

have lost old cookbook - does anyone have one they recommend???

hi again. I have just typed youa Nigella recipe and DS3 turned off the computer!

Anyway have just changed my mind as found a recipe from a local flour mill cookbook that's probably from the 50s.

DARK STICKY GINGERBREAD
6oz SR flour
2oz marg
2oz sugar
1 beaten egg
1 1/2 tablespoons milk
1/3 breakfast cup boiling water
pinch salt
2 tablespoons treacle/golden syrup
1 teaspoon ground ginger
1/2 teaspoon mixed spice or cinnamon
1 teaspoon bicarb

sieve dry ingredients into mixing bowl. melt fat, sugar & treacle then pour onto dry ingredients beating well. next beat in the egg and milk and the boiling water (boil the water in the treacle pan so nothing is wasted!) beat the mixture until bubbles appear on the surface. pour into a greased & lined 4" x 7" tin and bake for 50 mins in the centre of a moderate oven 350F. allow to cool in tin for 1/2 hour. apparently the flavour improves if you keep thisf or a couple of days before eating.

for variation you can make orange cake by using marmalade instead of treacle, and a teaspoon of orange essence/grated orange rind instead of spices.
