Veggie soup (whatever is in the bottom of the fridge - onion, cabbage, courgette, carrot etc etc), veg stock and largish teaspoon of korma powder. Serve with blob of yoghurt. Yum!

am loving the squash, parsnip and red onion one.

Another one I've tried which is fab is a carrot and orange one. Really yummy, although I put less orange than the recipe asked for, I liked it just hinting of orange.

spiced lentil soup with lemon and yoghurt

made pumpkin soup like wot Valentine Warner made on 'what to eat now' and it was stunningly good with only 5 ingredients.

Spiced carrot, butternut squash and lentil soup. Tis yummy and filling, real comfort food.

I once had a bowl of Rasam in a little Indian Cafe on Stroud Green road.

It was the most delicious bowlful and I still think about it 15 years later!

My mums carrot and red kidney bean- dirt cheap and yummy.

Serve with crusty baguette,butter and some nice brie.

Onion chopped finely
Carrots,about 1lb,sliced
Tin red kidney beans
Tin chopped tomatoes.
Seasoning.
Stock about a pint,either fancy proper stuff or chicken stock cubes depending on circumstance..
Dash of Worcester sauce.
Squidge tomato puree

Sweat onions,add carrot and kidney beans,tinned toms,seasoning and puree.
Add stock.Cook til carrots soft.

Minestrone

Carrots,grated
Celery,finely sliced
Onion,finely diced
Streaky bacon about 4 rashers diced
2 tins tomatoes
Several slices savoy cabbage
Broccoli florets
Chicken stock
Garlic 2 cloves
Spaghetti snapped into small strands
Potato grated
Any other left over veg!

Sweat onions and garlic,add bacon,add carrots,add stock,add toms,add broc,garlic and spag simmer til cooked.

Chestnut and sweet potato soup

Ingredients:

1.3 kg Sweet potatoes (Approximately 3 potatoes), peeled and roughly chopped into small pieces
2 tablespoons olive oil
2 red onions, peeled and roughly chopped
4 cloves garlic, peeled and finely chopped
1 teaspoon dried cumin
2 teaspoons dried cinnamon
200g Chestnuts, cooked and peeled (Vacuum packed or frozen are ideal), roughly chopped
1.5 litres vegetable or chicken stock
Salt and freshly ground black pepper (I've also used a tin of puree before and its been fine).

Method:

Heat the olive oil in a large saucepan. Sauté the sweet potatoes, red onions, cinnamon, cumin and garlic for 5 minutes. Add the stock. Bring to the boil and simmer for 20 minutes.

Taste and season accordingly. Transfer half of the soup into a liquidiser or food processor and whiz together. Return this to the saucepan and reheat when ready to serve.

I have carrot and lentil soup in the slow cooker just now. Carrots still a tad hard, but it's smells absolutely yummy!

Going to bake some bread tomorrow, with fresh butter, and top the soup off with some double cream.

Can't wait!

5 large carrots peeled and chopped.
1/2 lb red lentils. (Imperial bird )
chicken stock.
1 tin chopped tomatoes.
Liberal sprinkling of coriander and parsley.
1 large onion finely chopped.

Lump it all in the slow cooker and cook until tender.
Mines been on low for 5 hrs so I reckon about 8, as acarrots still a bit hard in the centre.
