easy vegetarian soup recipes?

Im after something that can just chop up and bung in a saucepan, no whizzing involved! Ideally types of beans and veg etc

Minestrone - pasta shapes, chopped veg (carrots, courgettes, leeks, cabbage, whatever really), tin of mixed beans, dollop of tomato puree, and some veg stock.

I start by frying chopped onion and garlic, then bung in the rest and simmer it til the pasta is cooked.

Rose Elliot has a very easy leek and potato soup recipe; dd1 (13) cooks it without any trouble. Can post recipe if you like.

mushroom:

chop and fry an onion. add stock. add lots of chopped mushrooms and if wildly organised the soaking water of some dried mushrooms and the mushrooms themselves, v finely chopped. season with paprika, s and p. simmer. add pasta, doesnt have to be small shapes, for appropriate cooking time. just before serving add a dollop of single cream.

lentil and vegetable soup
(green soup according to ds)

red/yellow lentils in stock and water bubbling away whilst you chop leeks, carrots, celeriac, celery (whatever you have to use up..green beans etc)
chuck em in, cook for 20 min
and towards the end add: coriander, parsley, tin of beans (borlotti etc), frozen peas, shredded cabbage is yum.. again anything you have to use up
further 10 mins and its done!

i often add cooked split peas too if any around

very filling, tasty and good for autumn winter
nice with garlic bread too!

2 courgettes, chopped.
2 peppers, chopped,
1/2 pack mushrooms, chopped.

Fry in some butter. Then add veg stock (from an oxo cube).

Simmer for 20 mins.

Blend.

pumpkin soup - very seasonal!

fry an onion in olive oil until translucent, add a heaped tsp of cumin powder, and a heaped tsp of coriander powder. Stir for couple of minutes, then add a pumpkin cubed. Stir for another couple of minutes, then pour in eniough veggie stock so that the pumpkin is covered. SImmer until pumpkin is soft, add a tin of tomatoes, let the tomatoes heat through, then blend and serve.

Add some red lentils to the pumpkin soup to make pumpkin and dahl. Very filling and cheap.

Fry onions and green peppers, add two tins chopped tomatoes one passatta. Add Butter beans, kidney beans and lentils, garlic, pepper, chilli if you like it, a couple of bay leaves and sage.
