Can you freeze fresh herbs?

We keep getting huge bunches from the market and chucking half of them away. Any reason they can't be frozen?

depends what it is and what you use them for.

Mint is OK if using for a mint sauce, but it can go soggy when defrosted.

Chives OK

basil - no

parsley - chopped then OK

It's mainly basil - jsut want to freeze it so can use it at a later date

You can freeze all herbs if you chop them and mix with a little water and freeze in ice cube trays.

But it will only be suitable for cooking.

I freeze loads of basil for pasta sauces etc.
