chicken & mushroom in white wine sauce as a filling is looking like a tasty option according to my oh.

So . . . white sauce with added vino?

Or is there another method I should know about?

I'd cook the mushrooms in the wine, reducing the liquid, and add cream, not allowing it to boil once the cream is added. Then cheat with some cornflour mixed in a little milk if it needs thickening

Sorry for hijack. I'd do it as Mary says but with creme fraiche and I'd add a bit of plain flour before the creme fraiche
