Home made chicken nuggets - how to?

I know this has probably been done to death but does anyone have a quick recipe for home made chicken nuggets please. Haven't got the patience/time to trawl throught the recipe section.
Also any tips for home made oven chips that don't stick to the pan (haven't got a deep fat fryer!)

Got this one from someone on Mumsnet ages ago - my kids love it

Annabel Karmel's chicken and apple balls

3 chicken breasts or 6 thighs
1 apple
1 tablespoon of lemon juice
pinch herbs
half onion chopped finely
1 stock cube (I use a teaspoon of stock powder)
2 tablespoons fresh breadcrumbs
flour
oil

mince chicken in food processor, grate apple, add lemon juice to apple, mix together chicken, apple, herbs, onion, stock powder, breadcrumbs

flour hands and shape into 10 gol fball sized balls.

Shallow fry in oil until golden for about 6 mins.

(Also works if you bake them in the oven about 10 -15mins at 180 deg)

and here's ENID's famous recipe

Homemade Chicken Nuggets

750g minced chicken
175g breadcrumbs
175g grated cheddar
1 tbsp mayo to bind
1 clove garlic
salt and pepper
beaten egg and some fine toast breadcrumbs to coat the nuggets

Preheat oven to 180C. Mix all ingredients up to and including salt and pepper together. Form into walnut sized nuggets and roll them in beaten egg and then in toasted breadcrumbs. You can freeze them now if you want to.

Place on greased baking sheet and cook for about 20 minutes (45 if frozen). Voila!

They don't take long to make and once they are done you can freeze them. They are delicious too!

home made chips, scrub pots v////////////clean, (dd's contribution sorry!) cut potatoes into quarters, leaving skin on. Boil for 5 minutes (or more if you want) to soften, then drain and put in the oven with olive oil until skins are crisp.

peel potato
chop into cubes - the smaller the quicker they cook
roll in olive oil with a little crushed garlic and salt

bake in oven for 15 min at 180 -200 - turn halfway through

why am I blessed with a child who loves junk food - I spend my life trying to wean him off it buy making home-made substitutes.

Am really on a roll with this one after watching JO - (I do have one child who likes proper food, so don't feel a complete failure)

We cut up the chicken in to cubes and just coat them with crushed cornflakes. Delicious.

Bang Bang chicken (annabel karmel)

Makes 8 portions

2 chicken breasts, off the bone and skinned
3 slices wholemeal bread
1 tbsp grated parmesan (optional)
1tbsp chopped parsely (optional)
2 tbsp plain flour
1 beaten egg
vegetable oil

cover the chicken with greaseproof paper and flatten with a mallet or rolling pin, then cut each breast length ways into 4 strips. Make breadcrumbs from the slices of bread in a food processor, and mix the breadcrumbs with the parmesan and parsley in a bowl if you are using them.
Dip the chicken into the flour and then into the egg and finally into the breadcrumbs. Fry in oil for 3 - 4 minutes each side until golden on the outside and cooked through. Drain on kitchen paper and serve.

Nigella has a fantastic recipe making the 'coating' out of Nachos!!! Yum. Just cut up chicken breasts into big chunks.

In blender put in a big pack of Nachos (plain doritos) and some herbs/spices (whatever takes your fancy). Blend until crumbs.

Dip chicken in Egg, then flour then nachos. Deep fry or cook in the oven coated in a little Olive Oil. YUMMY!

Well I am a crap mum today - had to do swimming lesson after school and gave in to junk food and got them Happy Meals on the way home.

I hate McDonalds - we haven't been there for over a month, but it gets the boys out of the changing room on time.

Funnily enough I spent the journey home lecturing the boys about junk food and why it isn't healthy and how they mustn't eat it very often. Am about to cram some grapes and apple slices (home sliced, not from McDs) down tehm to make myself feel better.

And dh has just rung and is going to pick up a chinese takeaway on the way home. I guess the chicken breasts that I had plans for will stay in the fridge tonight.

Will try harder tomorrow

me too iata - i hate mcds but dd asked for it today (she hardly ever does)- she had one in half term as wll but can't remember the last time she had one before that. I too will try harder tomorrow

no you can mince it yourself, chuck breasts or thighs in a magimix and pulse.

well when I'm being a better mum and making my own, I use chicken breasts and pulverise them in the blender - I don't like to use mince as it obviously isn't made with pure chicken breast.
