I need to find a good (i really mean quick) recipe for a fruit cake with no mixed peel, cherries or currents, though raisins and sultanas are ok!

And also, if i wanted to ice a fruit cake with the regalice ready roll stuff, do i NEED marzipan, as no-one who im making the cakes for, eats or likes marzipan? But wot would i do instead, boiled jam?

Thanks
x

4 OZ marg
4OZ brown sugar
1tbs trecle
2 eggs
6oz self raising flour
12oz fruit
1/4 tsp mixed spice

mix marg, trecle and sugar.
add eggs then fruit mixed spice and flour.
Preheat oven to gas mark 1, place mixture in a lined cake tin. Cook in middle of oven for 3 hours. Not too quick i know but very easy

All you need to do is substitute other things for the peel etc. I would suggest pieces of dried apricot or pineapple - when I make a fruit cake I just keep to the total weight of fruit (and nuts and peel) and use whatever comes to hand.
You can use Regal Ice without marzipan. Warm up some jam or honey and paint that over the surface of the cake, then put on your icing. You just need a slightly sticky surface to help the icing adhere (I con't recommend using golden syrup - that is too sticky).
