Inventive ways with left-overs

Trying to save money, reduce waste and therefore save the world, I'd like some good ideas for using up left-overs. I try not to throw food away, but we can get tired of endless 'mixed veg soups' with a bit of everything in them. They all seem to taste the same. Anyone got good ideas for sour milk? (As you can see, I really don't like to throw anything away.)

the hard bits from ends of parmesan go in the freezer and i chuck them into white sauce for flavour (remove before serving )

Make Nasi Goreng with leftover chicken - especially the dark meat and slightly gristly bits - shred and fry with finely sliced carrots, beansprouts, peppers, spring onions, add cooked rice, chilli, garlic, soy sauce & chinese five spice if you have it.
