Chicken Dinner ideas??

Hi, We have friends coming for dinner on Saturday and want to do a nice meal with chicken Breasts, any ideas of what I could do?

chicken and cashew nut stir fry

thai style chicken

stir fried chicken and vegetables

any type of chicken curry

Italian style chicken with olives and peppers and a tomato sauce

chicken pie

chicken paprika

chicken breasts stuffed withy mushrooms and wrapped in parma ham and baked

just done a nice one tonight - bash a chicken breast between two sheets of cling film until pretty flat. season on both sides - go light on salt because the ham you add is fairly salty. sprinkle some grated parmesan on one side then cover that side with parma ham/prosciutto (i used two slices per chicken breast)

heat pan with olive oil and pan fry both sides, ham side down first. flip after 2-3 mins - takes not much more than 5 mins in total. ham goes crispy, chicken stays moist.

i served with potato rosti and a nice rocket/spinach/watercress salad.

i imagine you could vary this quite easily - mozzarella instead of parmesan, maybe add some basil leaves etc.

I do one where I brown chicken in an ovenproof saucepan, and some sliced onions alongside, salt and pepper it, then pour over a 'sauce' consisting of white wine and dijon mustard whisked together. The whole lot goes in the oven for 30 minutes or so. Very easy and very nice!

Bash chicken breasts, cut open and stuff with pesto, wrap in parm ham or 2 slices bacon oven for 30 mins.

Thick slice of cheese on top chicken breast, wrap in p ham or bacon, half hour in oven.

Chicken breasts in oven proof dish, ram in cherry tomatoes (like whole pack) add few sliced mushrooms if you like, good glug of olive oil, after 40 mins add chopped bacon pices to toms and thick slice of cheese to chicken for antoehr 15 mins. Toms make lovely sauce (not much though) yom yum yum!!!

How idle are you feeling. Not a lot to do with this one.

Chicken thighs, skinless, in a large roasting tin, slices of chorizo and prunes around them, black pepper to season, 1/2 white wine to stock, pour into tin, thyme leaves on top. Oven 200C for 40 mins. Once cooked remove the chicken, chorizo and prunes from tin and heat juices over stove to thicken the sauce.

To serve, fry some whole unblanched almonds in butter. Serve with buttered couscous.
