I really wanted to make one for this weekend. I can only find American ones online that have a weird oil in them!

Be warned though (I didn't realise this until I'd started weighing out the ingredients) It is for three cakes! I did three square cakes rather than a massive layered one. One for my friend and two in the freezer (!)

My friend and her husband loved it (I think about half was gone before I even left!).
Only prob. I had was with the icing, it was a bit runny. My friend said for cream cheese icing the best thing is Philadelphia. (I had used a low fat cream cheese)

I did it too and it was bloody delicious! Everyone was awed and wowed and demanded the recipe. Hurrah for Hummingbird Cake!
