Black Eyed Beans ?

I've got a jar of black eyes beans from Lidl and don't know what to do with them, any ideas ???

Put them in a stir fry?

Pretty sure the Delia winter collection book uses them in loads of recipes. I'd just add them to chili (sp?) for a change of bean..

They are nice fried up with leek. Or bean soup?

Big thumbs up for Chilli here too. We use black eyed and kidney beans. Delish. Could work in a general beany kind of dish, and also nice in a bean salad. Basically they're very north american, tex mex, south american.

Thanks, bean soup sounds good, we have chilli a lot so would like somethng different, off to find recipe for bean soup.

cold in a salad with chopped onion, garlic, tomatoes, cucumber, olive oil and lemon juice... yummmy
