Mackeral recipes

Feeling very virtuous I went to the fishmonger for a mackeral. Errr now what? I have only ever cooked the tinned variety into fishcakes so I am not quite sure what to do with it - skin and bones and all (luckily the fishmoneger topped and tailed and gutted it for me).

Any thoughts? I was thinking of roasting it on a layer of potatoes, parsnips and fennel.

because mackerel is v. oily, I usually do it with something fruity, so your recipe sounds yummy but I wonder if you should replace the parsnips with wedges of apple, or even lemon which will go all nice & caramelised in the oven.

Yum. I sometimes all tomatoes too. I generally end up roasting fish (nice with salmon, tuna or sole) over veg (very boring but very easy!). Now having the fish tonight (fancied pasta last night), and will try apples.
