I am doing minted lamb which cooks on low for 4-6 hours. It will be more than 6 hours before DH and I eat it. Do I leave the slow cooker on low or turn it off please?

Leave it on, it won't dry it up. If you turn it off you'll only have to re-heat it.

I am winging it a bit as I realised too late I didn't have a tin of tomatoes so used 3 normal ones and 2 plum ones. Would it be okay to add more stock later if it looks like it is drying up as there isn't much liquid in the cooker atm.

Slow cooking doesn't use that much liquid. But, yes, add some more if you think it looks dry. Tomatoe puree would add some colour, or some red wine,even though that seems a waste when you'd rather neck the wine!
