what can i do with fresh beetroot?

Is it completely fresh?
It is usual to cook it in a pressure cooker before using it.
You can then put it in salads, soups and other dishes.
You can also put it in a white sauce (which turns a seriously violent shade of pink as a result!!!)

Have you just watched "What to eat now on BBC2"? Am not a beetroot fan, but a couple of recipes came up tonight which I'm sure you could find on BBC website.

roasted beetroot is lovely - treat like any other root veg
oven cooked with a tin of coconut milk is a great side dish - turns the milk pink and makes it all soft and tasty
soup is pretty cool with beetroot too.

Yes roasted with a bit of olive oil, garlic, thyme and balsamic vinegar is lovely.

Grated raw with grated apple, makes a lovely salad.

cook it (steam or boil, or roast, peel after cooking), slice, put in a bowl with gently fried onions, then cover with white sauce and oven bake. It's SO nice.

I watched that t&g, made me want to start growing some. I love it.

beetroot and chocolate cake- honest! google it, there are loads of recipes!

grated raw and sprinkled with soy sauce and toasted sunflower seeds or sesame seeds is divine.

I also second the beetroot and chocolate cake, or a carrot cake but substituting the carrot for beetroot.

I just like boiling it up and eatingit, plain, with sour cream.

I boil for 30 mins, then peel and roast. Can add balsalmic vinegar when roasting and some creme fraiche towards the end, yummy. Have also made a good beetroot and apple soup - boil the beetroot in some veg stock, once the beetroot is starting to soften add an apple.

I love fresh beetroot!

Beetroot soup with dill and creme fraiche is delicious.

I have eaten beetroot cake at a friends house and it was quite nice. Never made it though.
