Sausage beans & mash - in casserole form?!?!

We all love sausage, beans & mash and I've just an insane idea about making it as a casserole in the slow cooker, except with chunks of potato instead of mash. Basically, a casserole of chopped sausages, baked beans (probably with a tin of tomatoes and some stock?) and lumps of potato thrown in. What do you think? If the idea of baked beans sounds gross, I've used it in a sort of vegetabley lentily casserole thing before and it's really yummy, honest.

I did this last week. I fried an onion, diced carrots, diced potato, mushrooms and a grated apple, browned the sausages then added a tin of tomatoes, a tin of baked beans, a dsah of worcester sauce, tomato puree, a dash of red wine and a beef stock cube. It was bloody lovely!

Sausage and baked bean asserole is yummy, ddind the potato in in chunks would prob be good too. Another option would be to use whole new potatoes which I think would hold their shape better. i have done a beef casserole recipe with new pots in and it works very well.

I do something similar with a tin of beans, a tin of tomatoes and a glass of red wine. Absolutely gorgeous.

I make my cowboy casserole differently
Fried onions, chunks of sausage, baked beans & chopped pineapple

The children love it

You can serve it on a baked potato

Oh yeah i've just realised I didn't add potato to mine I served it with a baked potato!

I do this in the oven. Sausages and sliced onion first (or baby onions?) for 15 mins, the add tinned toms and beans, worcester sauce, salt pepper etc. Bake for another 10 mins. Top with diced or sliced par boiled spuds, top with a little cheese.

Bake for another 20 mins until golden brown.

Mine is in the slow cooker now. I love that feeling of dinner being sorted by 10 am.
