I am about to attempt a roast pork in my aga for dinner tonight. Is there anything special I need to know? I am still learning all about the aga.
Thanks

Only saw your message now, how did it go? Haven't made roast pork but whenever I've made a roast chicken in the Aga I just can't get the skin crispy so i make it in the regular oven

how many ovens do you have? For a two oven aga i would cook pork in the bottom (slower cooking stops it drying out). When cooked and resting i would remove the crackling and put it in the top oven to crisp up.
Delia's tips with crackling work well imo (no fat or water neear the crackling and make sure that the dish that the pork is being cooked in as v. shallow
