I know I know, its not even Octiber yet, but I have been landed with cooking dinner for 8 this year - first time ever... eeek.

Any ideas for starters - ideally something that can at be made at least partially in advance?

TIA

We always have Borscht (Polish beetroot soup)

You can make ahead of time and freeze

Serve with cream/ sour cream

Some kind of smoked salmon something or other - easy to make in advance, looks good and is poncy enough if done right that looks impressive.

something very light.. melon & parma ham? melon & prawns? Soup would be easy - just make sure it's not too rich. Smoked salmon.

And don't apologise for planning in advance - get the planning out of the way now and you'll be able to relax more nearer the time.

Smoked salmon, scampi and lettuce.

Goats cheese salad

Bruscheta

As a child my sis and I would always have egg mayonaise. Not cool but soooooo good!
