scones - idiot proof receipe please!!

womans weekly have lied to me

I made their fail safe, idiot proof scones this morning and frankly they are cack. Of course this is nothing to do with my inability to cook and must be their receipe

I want light, fluffy moreish yummy scones so I need someone's well used receipe please

Drop Scones

1 egg
500ml (2 cups) flour
250 ml (1 cup) milk/water or mixture of both
80 ml ( 1/3 cup) cooking oil
20 ml (4 tsp) baking powder
6-8 tsp sugar
Pinch of salt

Mix all the above together - mixture should be a sloppy dough
Put mixture in well greased muffin pan
Bake at 200 degrees C for 15 minutes

The key thing with scones is that you have to roll them out very thick - 1-2cm.

Buttermilk or sour milk, instead of fresh milk, improves the recipe.

Use SR flour and chuck in an extra bit of baking powerder for luch.

Cook for a short time in a very hot oven.

Serve while very fresh.

Drop scones are not the same as scones, nagapie.

They are basically what is known as Scotch pancakes. I grew up knowing them as pancakes beause I was in Scotland, so no qualifier needed. They are very different from scones.

Think I just titled it incorrectly - my mum usually serves these with lots of cream and jam and aren't flat 'mini pancakes....

Maybe, if you are putting them in muffin tins, they are Devonshire scones.

Proper scones sit on a baking tray without any support.

I always use these ones and they have never failed me.
If you don't have buttermilk squeeze a bit of lemon juice into regular milk and leave to stand for 20min.
