Curry from a jar

If I'm using a cook- in curry sauce and it says you can use veg instead of chicken, what can I use? Root veg seems the obvious choice but is there something I can do to vary it?

oh yum we do butternut squash and green bean curry alot in our house.

Or we just chuck in all vegetables we have sitting around:

carrots
beans
broccoli
potato
B squash
courgettes
sweetcorn
peas

...anything really for a "mixed vegetable curry"!

Paneer. yum yum yum. Waitrose sells it now - or try a local Indian/Asian store. Has to be with peas though!

Broad beans

What type of sauce us it - and did it turn out yummy? I have never had a nice one in a jar (I use the dry 'curried vegetables' spice mixed from The Spice Shop in Portobello - really really good).

feel really stooopid for not thinking of all of the above. Will empty contents of veg drawer into slow cooker and see how it goes. Thanks all.

We used to use potatoes a lot when I was a student - half and half with chicken. I often add mushrooms and onions to a jar of curry sauce.
