I want to make an orange marmalade sponge cake, so my question is - My sponges are normally like bisuits what am I doing wrong and how do I make them rise well

hiya

the recipe i use for my coffee shop is...

weigh your eggs (still in shells) 4 eggd will make a 2 layer cake.
then weigh out butter, sugar and self raising flour in the same amounts.

cream the soft butter and sugar until light and fluffy (should go pale)
the beat eggs together and add i little at a time to the butter mix mixing very well between each addition
when all egg added sift in the flour to the mix and add 1/2 tsp baking powder. mix together until smooth. Do not over mix as cake will go tough.

pour into buttered and floured tins and bake at 170C in fan (180C normal) for 20 mins. check by poking with sharp knife - should come out clean.

For that size I would use two 8" cake tins. Butter always tastes better than marg!!!

Oopsacoconut, just made the cake from your recipie today for my sons 9th Birthday and it turned out fab. Don't make cakes often so was bit worried but it great so thank you for the idea.
