Food for diabetics

My mum is diabetic and often comes for dinner. I think she's getting a bit bored with the same old puddings, fruit, fruit and more fruit (she even has to count out how many she has of some things). Any1 got any great diabetic recipes to cheer her up a bit?

How about making pancakes/crepes with splenda?

Could do wholemeal french toast with splenda and dark chocolate,

Make a banana cake with some dark chocolate and walnuts in.

I assume that she is counting carbohydrates and also has to eat slow release sugars? Or is she watching calories/fat too? x

Low GI choc brownies (recipe in Rick Gallup's book) - made with red kidney beans! Serve with vanilla ice cream.
Actually his book has several cake recipes in, which would all be suitable. I've used them whilst having gestational diabetes.
