where am i going wrong with fairy cakes????

i love baking cakes etc but have noticed recently that when i make fairy cakes, that they either:
1/ burn on the bottom

2/ when you take them out of the cases they come away in bits

3/ the top sometimes goes crunchy

or lastly the top bit goes too brown but is not cooked inside which doesnt make them look a lovely golden colour like they are supposed to.
i just cant work out where im going wrong.

everything else i do turns out fine and so have these in the past
if anyone has any ideas id really appreciate them

Maybe your oven gets too hot. Get an inexpensive oven thermometer and rely on that rather than on the oven dial.

it does sound like the temp in your oven is uneven

have you tried wacking up the heat for a good 10 minutes then bringing it down to the temp you want for 10 minutes before putting your cakes in?

yeah its just strange that everything else turns out ok. maybe if i try putting them on the middle shelf that might help. the recipe says top but something obv isnt right there. thanks for your suggestions.
where would i get an oven thermometer from?

ive never heard of lakeland. im in bromley so i might go in later and have a look around the shops there.

I used to laugh at my friends when they got excited about Lakeland. Now I can't wait for the catalogue to come through my door and I've been known to spend ages on the website too

ha ha my god i dont know whether i should go onto the website now. it was bad enough when i got addicted to ebay let alone a website full of gadgets. dare i go on to it??!!
